Ingredients:
Mutton 1 kg, Cut into large chunks, about 4-cm. Trim off any fat.
Wolf berries, 25g
Yu zhu (Solomon's seal), 30g
Red dates, 12-15pcs
Ginger, thinly sliced, 3-4 inches
2 medium carrots, cut into big pcs
3 medium potatoes, cut into big pcs
2 tbsp light soy sauce
Coriander, garnish
3.5 litres water
Salt to taste
Instructions:
1. Bring 3.5 litres of water to a boil over high heat.
2. Add the mutton, red dates, Solomon's seal and ginger to the boiling water. Cover and simmer for 2 hours over low heat. Stirring occasionally. After 2 hours check if the mutton is ready. To check if the mutton is soft and tender, check the direction of the muscle fibers and cut across it using knife or fork, If it slides in easily, your meat is ready to serve.
3. Add potatoes. Cover and simmer for 7-10 minutes.
4. Add carrots, wolf berries, light soy sauce and salt to taste. Cover, and simmer for another 5 minutes.
5. Your Herbal Mutton Soup is ready! Serve hot. Enjoy!
