Ingredients:
1 can Sardines (425 grams)
4 cups cooked rice
3 cloves garlic, finely chopped
1 medium onion, finely chopped
2 bird's eye chili, smashed
1 pepper chili, finely sliced (garnish)
3 tbsp cooking oil
Pepper and salt to taste
Procedure:
1. Open the can and separate the sardines from the sauce and flake the sardines using a fork.
2. Heat a wok over high heat. Add 3 tbsp cooking oil on medium heat. Add garlic and onion, saute until fragrant. Add bird's eye chili and saute for about 30 seconds. Add in sardines and cook for 2 minutes.
3. Add the rice and mix well. Add black pepper and salt according to your taste. Stir fry continuously for 2 minutes over high heat.
4. Transfer on a plate. Garnish with pepper chili. Fry an egg and crackers (keropok) to serve with fried rice. Enjoy!
Tips: You can add the sardines' tomato sauce if you like, and that’s perfectly fine but make sure to measure or use right amount of sauce to get the right texture otherwise too much sauce will make the rice mushy.
