Chicken Rendang Minang is a traditional Minangkabau (Indonesia) dish. It is popular across Indonesia and neighbouring countries such as Malaysia, Brunei and Singapore. Chicken Rendang is rich in flavour and delicious dish made with blended spices, toasted coconut paste (kerisik) combined with coconut milk, lemongrass, kaffir lime and turmeric leaves.
It takes a bit of work to make this recipe, but the results is all worth it in the end.

Chicken Rendang Minang Style Recipe/ Resepi Rendang Ayam Minang

Ingredients/ Bahan2:
Chicken /Ayam (1 whole chicken/1 ekor)
Toasted coconut paste/Kerisik, 3 tbsp
Kaffir lime leave/Daun limau purut, 5 pcs
Gelugor slice/Asam keping, 1
Coconut milk/ Santan kelapa, (1 p) 1 cup (first extract), 2 cups (second extract)
Salt/Garam 1 tsp (adjust to your taste).
Palm sugar/Gula melaka (optional)
Tumeric leaves/Daun kunyit (optional)
For saute/Tumis:
Cooking oil/minyak masak, 1 tbsp
Lemongrass/Serai, 3 pcs
Onion/Bawang merah, 1 large
Ingredients for spice paste/Bahan2 kisar:
Tumeric root/Kunyit hidup- 2"
Ginger/Halia- 2"
Galangal/Lengkuas - 2"
Garlic/Bawang putih - 5 cloves/ 5 ulas
Bird eyes chili/Cili api - 5-30pcs (depends on how spicy you like)
Cooking steps/Cara- cara masak:
1. Heat wok over medium heat. Add cooking oil and heat up, add onion and lemongrass. Cook until fragrant.
Panaskan kuali di atas api sederhana. Masukkan minyak masak dan panaskan, masukkan bawang besar dan serai. Tumis hingga naik bau.
2. Add chicken and salt. Mix everything together.
When the chicken is half cooked add the blended spices, diluted coconut milk, and Gelugor slice. Mix everything together. Cover, and cook for 30 minutes or until the liquid is reduced over medium heat.
Masukkanasukkan ayam dan garam. Campurkan semuanya.
Bila ayam dah separuh masak masukkan rempah kisar, santan cair, dan asam keping. Gaul rata. Tutup, dan masak selama 30 minit atau sehingga cecair berkurangan dengan api sederhana.
3. Add the coconut milk and palm sugar and then mix well. Bring to a boil, and add coconut paste, turmeric leaves, and kaffir lime leaves. Mix everything together.
Cook until the sauce is thickened over low heat.
Masukkan santan dan gula melaka dan gaul rata. Bila didih, masukkan kerisik kelapa, daun kunyit, dan daun limau purut. Gaul rata.
Masak sehingga menjadi pekat dengan api kecil.
4. Serve hot with steamed rice. Enjoy!
