Pumpkin with Sago and Coconut Milk

Ingredients:
400g pumpkin
1/2 cup sago
1 cup coconut milk
3 cups water
1/2 cup sugar but feel free to use palm sugar, maple syrup, honey, molasses or other sweeteners. (Adjust to your taste).
Procedure:
1. Steam the pumpkin for 10 minutes over medium heat.
2. Once the pumpkin is done, cool down. Mash the pumpkin with a masher or a fork. Set Aside.
3. In a boiling pot add 1/2 cup sago. Boiled for about 8-10 minutes over medium heat. Stirring occasionally. Once the sago is cooked, rinse and drain well.
4. In a pot prepare 3 cups of water. Once boiled, add the mashed pumpkin. Mix well and bring to a boil. Add 1 cup coconut milk. Cook for 3 minutes over medium heat. Stirring frequently. Add sugar. Once boiled remove the pot and let it cool down.
5. Finally, add in the sago and mix well.
6. Serve warm or cold. Enjoy!
