Chicken Sandwich

Ingredients:

Chicken Preparation:

1 Boneless skinless chicken breast, shredded

1 tbsp peppercorn

1 medium onion, cut into halves

4 cups water


Sandwich:

4 slices of bread

1 medium onion, finely chopped

1 tomato, sliced

4-6 Lettuce leaves

1 medium carrot, grated

1 cup mayonnaise

2 tbsp condensed milk

Salt and pepper to taste


Instructions:

1. In a pot, add 4 cups water, onion and peppercorns. Bring to a boil over high heat.


2. Next, add the chicken. Reduce the heat to medium. Cover and cook for 12-15 minutes.


3. Remove the chicken. Transfer to a plate and let it cool down. Shred the chicken.


4. In a mixing bowl, combine shredded chicken, carrot, onion, mayonnaise, condensed milk, salt and pepper.


5. Spread the chicken sandwich over the bread. Top one or 2 lettuce leaves and tomato slices. Cut into half if needed and serve. Enjoy!

Store it in an airtight container. Can keep for weeks in the refrigerator.
