Rice Cake (Puto)

Ingredients:
2 cups rice flour
200 ml fresh coconut milk (whole coconut)
1 cup water
1 tbsp sugar (Adjust to your taste)
1 1/2 tbsp baking powder
1/4 tsp salt
Standard size paper cups
Procedure:
1. In a bowl, combine rice flour, sugar, baking powder and salt. Mix until just combined.
2. Add the water and coconut milk. Whisk until smooth and well blended. Cover and set aside for 2 hours.
3. Start placing the cupcake liners in the molds. Pour the batter into molds until 3/4 full.
4. Fill the steamer with water and bring to a boil. Once boiling reduce heat to medium-low.
5. Steam for about 12-15 minutes or until an inserted toothpick comes out clean.
6. Remove the puto from molds. Serve warm. Enjoy!
