The Piaya or Piyaya is a round flat bread with a sweet filling made of muscovado sugar (classic filling) and purple yam from the Philippines especially common in Negros Occidental and Iloilo, my hometown where it is a popular delicacy. It is the famous delicacy of Negros and they have the best Piaya.

Ingredients:
2 cups all purpose flour
1/4 cup butter/margarine/3 tbsp oil
1/4 tsp salt
1/2 cup water
Sesame seed (optional)
Filling:
1 cup red sugar/muscovado sugar
3/4 cup all purpose flour
2 tbsp butter/margarine
1 tbsp water
Instructions:
1. In a large bowl, combine 2 cups all purpose flour, 1/4 cup butter/margarine and 1/4 tsp salt. Mix well. Add 1 tablespoon of water at a time to give you more control over your dough. The dough should be tacky, not too wet or sticky. If too dry, add a bit of water to the right consistency. Then knead dough until it is smooth. This takes between three to five minutes. Then shape it into a round, put in the bowl, cover with a kitchen towel or plastic wrap and let the dough rest for 30 minutes.
Filling:
2. Meanwhile, In a bowl, combine 1 cup red sugar/muscovado sugar, 3/4 cup all purpose flour, 2 tbsp butter/margarine, 1 tbsp water. Mix well. If it is too dry add a bit of water to get its right consistency.
3. Sprinkle a surface with flour and place the ball of dough on top. Devide the dough into 2 parts. Use rolling pin to flatten the dough. Then roll it into an oval. Devide the dough into 10 equal portions. Fill the dough with a filling using measuring spoon. Fold the edges and seal the centre then flatten the dough with a rolling pin into a round. Sprinkle with sesame seeds on each side of dough (Optional).
4. Preheat non sticky pan over medium heat. Cook the piaya until golden brown and crispy on both sides.
5. Serve warm. Enjoy!
